Ingredients
3-4 medium red potatoes, cut into uniform pieces
1-2 Tablespoons olive oil
½- ¾ cup roughly chopped onion
12 oz Kielbasa sausage, cut into 1/4-inch slices
3 tablespoons brown sugar
3 tablespoons cider vinegar
1 1/2 tablespoon Dijon mustard*
¾ teaspoon dried thyme
½ teaspoon salt
½ teaspoon garlic powder
¼- ½ teaspoon pepper
2 cups fresh baby spinach
Directions
In a bowl mix the sauce: brown sugar, vinegar, mustard, thyme, garlic powder, salt, and pepper. Set aside.
Cut potatoes in the size of your preference. The larger they are the long they will take to cook.
On medium heat, heat olive oil in a large pan and add potatoes, cook until tender, getting a nice sear on them.
Remove potatoes from skillet when tender, set aside.
In the same skillet, on medium-high heat; saute onion and
kielbasa until onion is tender and kielbasa has started to have some sear.
Add potatoes and sauce and gently mix.
Cook for 3-4 minutes, stirring occasionally.
Add spinach, heat until wilted.
