Italian Sausage

 

1# freshly ground Pork  about 25% fat
2 teaspoons Garlic powder
1 teaspoon dried Parsley
2 teaspoons Paprika
2 teaspoons Salt
1/2 teaspoon ground Pepper
1 teaspoon crushed Fennel seeds
1 teaspoon Onion powder
1/4 - 1/2 teaspoons crushed Red Pepper
1/2 teaspoon dried Thyme
1/2 teaspoon dried Rosemary
1/2 teaspoon dried Oregano
1/4 teaspoon dried Sage
1 teaspoon brown sugar

Mix spices together in a small bowl.
Place pork in a large mixing bowl and sprinkle spice mix over.
Mix with hands until well blended, but do not overmix!
