Breakfast Sausage Sage




1 1/2 pounds ground pork with about 25% fat
1 teaspoons dried Sage
3/4 teaspoon dried Thyme
1 teaspoon crushed Fennel Seed
1/4 - 1/2 teaspoon crushed Red Pepper flakes
Pinch teaspoon Nutmeg
3/4  teaspoons ground Black Pepper
1 1/2 teaspoons Salt

Mix seasonings together in a small bowl and set aside.

Grind your pork & fat if necessary. Place your ground pork into a large mixing bowl.

Add the half the seasonings and mix well with hands.
Add the other half and mix until well distributed.

Let sit for 6 hours before using- it may be salty tasting if used sooner.

Form meat into patties, or crumble and fry.  Use for biscuits and gravy or stuffing!

Keep for two days in the refrigerator freeze if not using sooner.
