Taco Skillet

 
1 Tablespoon Olive Oil
1 pound ground Turkey
1 cup diced Red Bell Pepper
1/2 cup chopped Onion
Salt & Pepper
1/2 teaspoon Garlic Powder
1/2 teaspoon ground Cumin
1 teaspoon Chili Powder
12 oz Salsa, (your preferred heat)
1 small can Black Beans, rinsed & drained
1 ½ cups shredded Mexican cheese blend
1/4 cup Cotija cheese, grated
1/2 Lime
2 teaspoons dried Cilantro
Or 2 Tablespoons fresh Cilantro, chopped
1 Avocado, sliced
Tortilla Chips
 
Preheat oven to 475 degrees.
 
In a 10 inch oven safe skillet, heat the oil.
Add the Onion, pepper, and a pinch of salt and pepper.
Cook for 3 minutes or so until the pepper is tender.
 
Add the ground Turkey, 1/2  teaspoon salt, garlic powder, cumin, and chili powder.
Cook, breaking up the turkey in small pieces.
Cook for 5-7 minutes until it is cooked through.
Add the salsa and beans, and stir. 
Cook until heated through.
Sprinkle the grated cheeses on top.
 
Put into the oven for 5 minutes or until the cheese is melted.
 
Remove from oven, carefully, and sprinkle the top with the cilantro.
Garnish the top with the Avocado slices, then squeeze the lime over the top.
 
Serve with tortilla chips- crush and sprinkle on top, eat on the side, put them underneath, or use as scoops!
