Quick & Easy Baked Chicken Thighs


8 bone in chicken thighs
2 Tablespoons olive oil
1 teaspoon Salt
1  teaspoon ground pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon paprika
 
Preheat oven to 400 degrees.
 
In a small bowl, mix the seasonings together, set aside.
 
Line a large cookie sheet  with foil, turn up the edges to catch the grease.  Or you can you a large pan with shallow sides.  Place a metal rack, like a cooling rack onto a large cookie sheet. 
 
Place the thighs evenly space onto the rack, skin side up.
Brush or spray them with the olive oil.
 
Sprinkle the seasoning mixture evenly onto all of the thighs.
 
Place the pan in the oven, and cook for 30 minutes. 
Turn up the heat to 450 for 5 minutes. 

Check the temperature.
If necessary, turn the heat back down and cook the chicken until the internal temperature reaches 165 degrees.
