German Potato Soup

 Ingredients:
1 cup smoked German Sausage, sliced
4 cups Potatoes diced in 1/2" chunks
Serves 4
1 cup sliced Carrot
1 Leek, Sliced
1 Celery Stalk, sliced
1 clove Garlic, minced
5 cups Vegetable or Chicken Broth
1/2 cup Cream
1/2 teaspoon Salt
1/2 teaspoon black Pepper
1 Bay Leaf
Fresh Parsley (Optional)

Instructions:
Bring the broth to a boil.

Add the Carrots, Celery, Leek, Bay Leaf, and Garlic.
Cook about 15 minutes until tender.

Add the Sausage,  Potatoes, Cream, Salt, and Pepper.
Simmer for another 15 minutes.

Garnish with Parsley if using.

Serve hot! 

For best flavor, cool and keep in fridge overnight.
Reheat to a boil before serving.
