Honey Lime Skillet Chicken

 Ingredients:
3-5 Chicken thighs 
2 Tablespoons Olive Oil
1/2 teaspoon Cumin
1 teaspoon Chili Powder
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/3 cup Honey
1 Lime, zested & juiced
2 Tablespoons Soy Sauce*
1 Garlic clove, minced

Heat the olive oil in  a medium sized skillet over medium heat.
In a small bowl, mix together the Cumin, Chili Powder, Salt, & Pepper.  
Rub on the chicken pieces and place in skillet. 

In a small bowl, combine the honey, lime zest & juice, soy sauce, and garlic. 
Set aside.

Cook chicken until it is no longer pink (165 degrees).  Time will vary on if you used bone in or boneless thighs.
Remove the chicken from the skillet to a plate and set aside.

Reduce the heat, and add the honey mixture whisking until thickens-a couple of minutes. 

Add the chicken back to the skillet and coat it with the sauce.
