GLUTEN FREE Fresh Pasta


 cups flour Bobs's Red Mill 1 to 1 Baking flour
1/2 teaspoon salt
3 eggs plus enough water to make 1 cup of liquid


Put the flour and the salt in the bowl and mix with a spoon until blended.
On very low speed with your regular slowly add the eggs and water.
Switch to your bread hook and mix for 2 minutes.
Your dough should be moist, but not wet.  If it is too wet it will gum up in your pasta roller.

Set dough aside and cover with a damp paper towel to keep from drying while you prepare your pasta roller.

Prepare as desired.  Either dry, keep in fridge for up to three days or cook right  away.

To cook, boil a large pot of water, add some salt.
Boil pasta for about 3 minutes then drain and serve.
