Ingredients:
1 lb. boneless chicken breast, cut into 1 inch cubes
8 medium red potatoes, diced to 1/2 inch chunks
1/4 cup olive oil
2 teaspoon salt
1 ½ teaspoon ground black pepper
1 Tablespoon paprika
2 Tablespoons garlic powder
3 Tablespoons Franks red hot wing sauce
2 cup Cheddar cheese, shredded
1/2 -3/4 lb bacon, chopped and cooked
1/2 cup green onion, chopped
Sour cream
Directions:
Preheat oven to 400 degrees.
In a large bowl, combine the olive oil, salt, pepper, paprika, garlic powder and hot sauce. I know it seems like a lot!)
Add the potatoes and chicken and stir to coat evenly.
Place the potatoes and chicken in a 9×13” baking dish and bake for 45 – 55 minutes.
After cooking time, remove from the oven and top with the cheese and bacon.
Bake another 5 minutes .
Serve with sour cream and green onions.
